The Story

Resident Coffee Roasters was born from a chance encounter at a latte art competition in Gainesville, Florida, where Gabriel Chavez and Noe Lopez discovered they shared a vision for what specialty coffee could look like in a college town better known for Gator football than pour-overs . Gabriel, born in Ecuador and educated at the University of Florida, had been running a cafe called Wyatt’s Coffee since 2018, working as both barista and manager before eventually purchasing the shop outright . Noe brought years of roasting expertise honed in Dallas, Texas, where he had worked at Starbucks and other specialty roasting companies before relocating to Florida.

The two officially launched Resident Coffee Roasters in 2020, combining Gabriel’s front-of-house instincts and Ecuadorian coffee heritage with Noe’s deep technical knowledge of roasting . What began as a modest roasting operation quickly earned attention in Florida’s growing specialty coffee scene, with word spreading about the quality and care behind each bag . Their cafe at 4401 NW 25th Place in the Le Pavillon building became a gathering place for students, professionals, and coffee enthusiasts who wanted something beyond the typical campus coffee experience.

Resident has built its identity around storytelling and connection, treating each coffee as an opportunity to introduce drinkers to the farmers, cooperatives, and regions behind the beans . The brand’s rapid growth reflects a broader shift in the American South and Southeast, where a new generation of roasters is proving that world-class specialty coffee does not require a Brooklyn or Portland zip code . Gabriel and Noe continue to operate with the same energy and curiosity that brought them together at that latte art throwdown.

Sourcing & Relationships

Gabriel and Noe travel frequently to origin, visiting the farms and cooperatives that produce the coffees Resident offers . Gabriel’s Ecuadorian roots give the company a natural connection to South American producers, and the team has built particularly strong relationships with farms in Colombia, Ecuador, and Costa Rica . Their sourcing extends into East Africa as well, with Ethiopian single origins appearing regularly on the menu.

The emphasis at Resident is on transparency and narrative . Every coffee comes with detailed information about its origin, processing method, and the people who grew it . This storytelling approach is not just marketing; it reflects a genuine belief that coffee tastes better when you understand the labor and care that went into producing it, and that consumers who know the story are more likely to value and pay fairly for specialty-grade beans.

Roasting Philosophy

Resident roasts on a Mill City Roasters machine, taking a light-to-medium approach that prioritizes clarity and origin character . Noe’s roasting style aims to preserve the acidity, sweetness, and floral or fruit-forward notes that distinguish high-quality single-origin lots from commodity coffee . The team cups extensively and adjusts profiles to ensure each coffee expresses its best qualities, whether that means a bright and juicy Ethiopian natural or a clean and caramel-sweet Colombian washed lot.

The roasting operation remains intentionally small, allowing Resident to maintain quality control across every batch . This hands-on approach extends to their cafe, where the staff is trained to brew each coffee in a way that highlights the characteristics the roasting team worked to preserve . The result is a consistency between what the roasters taste on the cupping table and what customers experience in the cup.

What to Try

BOOM! BIG SHOT! is Resident’s signature blend, designed to be approachable yet complex enough to satisfy seasoned specialty drinkers . It serves as an excellent introduction to the brand’s style and tends to feature a balance of chocolate sweetness and bright fruit acidity that works well across brew methods.

The real draw at Resident is their rotating lineup of single-origin coffees, which changes frequently as new lots arrive and seasonal harvests cycle through . These offerings span a range of origins and processing methods, from washed Ecuadorian lots with clean citrus notes to natural Ethiopian coffees bursting with berry and stone fruit . Resident ships nationally through their website, and a subscription ensures you never miss a new release from this rapidly ascending Florida roaster.
