The Story

Coffee Libre was founded in 2009 by Seo Pil-hoon, a figure who helped build South Korea’s specialty coffee culture nearly from scratch . In 2007, Seo became the first Korean to earn SCAA Q-grader certification, establishing himself as a serious authority on coffee quality at a time when specialty coffee was virtually unknown in the country . He opened Coffee Libre while the Korean third wave was still in its infancy, driven by a conviction that Koreans deserved access to the same world-class coffees that were transforming cafe culture in places like Scandinavia, Australia, and the American West Coast.

Seo’s competitive credentials are extraordinary, even by global standards . He won the World Roasters Cup in both 2012 and 2013, becoming one of only a handful of roasters to claim back-to-back titles at the sport’s highest level . These victories put both Seo and South Korea on the global specialty coffee map, proving that exceptional roasting talent could emerge from a market that most of the industry had overlooked.

The Coffee Libre brand identity is unmistakable, built around the playful imagery of lucha libre wrestling masks that appear on signage, packaging, and the walls of every location . Inspired by the film “Nacho Libre,” the wrestling motif captures Seo’s scrappy, underdog spirit and his belief that great coffee should be fun, not pretentious . Today Coffee Libre operates four locations in Seoul and one in Shanghai, with shops in neighborhoods ranging from the trendy streets of Yeonnam-dong to a tucked-away spot inside Myeongdong Cathedral.

Sourcing & Relationships

Coffee Libre has been engaged in direct trade since 2010, and the scale of their sourcing network is remarkable for an independent roaster . Seo and his team now work with over 150 farms across 18 countries, building long-term relationships that prioritize both quality and fair compensation for producers . In the early years, Seo spent three to four months annually at origin, visiting farms and cupping coffees on site, driven by a belief that understanding coffee requires being present where it is grown.

The roastery is known for securing Cup of Excellence lots, the competition-winning coffees that represent the highest quality a producing country has to offer . These CoE selections sit alongside a broader catalog of single origins sourced through fair-trade channels, giving customers access to a range that spans from accessible everyday coffees to rare, auction-grade micro-lots . Seo’s direct involvement in sourcing ensures that every coffee on the menu reflects his personal quality standard and his commitment to supporting the producers who make specialty coffee possible.

Roasting Philosophy

Seo’s approach to roasting is shaped by his Q-grader training and competition experience, prioritizing sweetness, balance, and a clean cup above all else . Unlike many specialty roasters who commit to a single roast level, Coffee Libre offers a range from light to dark, calibrated to suit different coffees and different customers . This flexibility reflects Seo’s belief that the best roast for any given bean is the one that brings out its fullest potential, not a predetermined ideology about light versus dark.

The competition-honed precision is evident in every bag . Coffees are developed to highlight their origin character while maintaining a consistent baseline of sweetness and clarity . The roasting operation handles everything from the delicate light profiles needed for high-altitude Ethiopian naturals to the fuller development required for espresso blends, all under Seo’s exacting standards.

What to Try

The Bad Blood blend is Coffee Libre’s signature offering, a high-body, complex coffee designed to satisfy drinkers who want depth and richness without sacrificing quality . It has become one of the most recognized specialty blends in South Korea and serves as many customers’ introduction to what Coffee Libre does differently . For those looking to explore single origins, the rotating Cup of Excellence selections represent the pinnacle of what the roastery sources, offering rare lots from countries across Latin America and Africa.

Coffee Libre also produces signature drip bags that have become popular across South Korea, making specialty coffee accessible for home brewing without specialized equipment . The Yeonnam-dong flagship is the best place to experience the full range of offerings, from carefully prepared pour overs to espresso drinks, all served in a space decorated with the roastery’s iconic lucha libre aesthetic . Online ordering is available through their website, and the drip bag format makes Coffee Libre one of the easiest Korean specialty roasters to try for international customers.
