  2. 🫗 0:45 Close switch. Pour remaining 50% — immersion phase begins 320g
  3. 2:00 Open switch — begin drawdown
  4. 3:15 Drawdown complete

Notes

Hybrid percolation + immersion method. First pour (switch open) extracts aggressively; second pour (switch closed) extracts gently. Ratio flexible: 1:15 with a basic grinder, 1:16–1:17 with a more consistent burr grinder.
