The Clever Dripper is a mix between a French Press and a Pour-over coffee maker, bringing the best out of the two extraction methods; immersion and filter . The Clever Dripper was invented in 2008 by Abid Co., a Taiwanese company specializing in coffee equipment . Today, in Taiwan, the Clever®️ Method was proudly invented to blend the best of both worlds. Clever Dripper follows the Direct Immersion Brewing Method, producing an extremely rich body of coffee, easily and effortlessly .
A key innovation in its development was the patented base valve mechanism, which allows for controlled drainage and enables the brewer to function as a hybrid device—retaining water for immersion when closed and releasing it through a filter for percolation when opened . You get the evenly extracted brew of a french press with the clarity of a paper filter. You don’t need a gooseneck kettle or a fine tuned pouring technique, because the unique stopper design allows for a controlled full immersion extraction .
The Clever Dripper is one of the easiest brew methods out there, offering the benefits of pour over and French press brewing without the drawbacks of either. This is achieved through the Clever’s conical build (similar to a pour over) and by retaining the water and coffee grounds within the brew chamber (in the style of a French press) until the draining valve is activated. This allows you to have full immersion and still utilize a filter to catch any sediment .
Equipment and Setup
Plus, its made with heat-resistant, durable and BPA-free Eastman Tritan™ copolyester plastic, so you won’t have to worry about babying this brewer . You don’t need a special kettle or carafe and you can get the filters (standard #4 paper filters) whilst meandering down the coffee aisle of the grocery store . Paper filters are easily accessible at any major supermarkets .
For optimal brewing, you’ll need a gram scale for precision, a timer, and filtered water. The dripper will fit on cups and thermoses with tops between 1.5″ and 3.75″ in diameter . Fold the bottom and side of the filter so that it will set flush in the Clever Dripper. Set your dripper on your mug, and pour a generous amount of water through your paper filter, completely wetting the entire filter, to rinse paper dust .
The two main sizes available are 300ml and 500ml models, with most coffee shops and home brewers preferring the larger 18-ounce capacity for single servings.
Ratios, Temperature, and Grind
Coffee professionals recommend different ratios depending on preference and brewing method. We recommend using 24g of coffee per 400ml of filtered, low mineral water . RATIO: 1:16 (25g coffee, 400g water) . Almost every brewing guide calls for a 1:15 coffee-to-water ratio and we’re no exception. Using the larger 18 oz model, our Clever coffee dripper instructions call for 23g of coffee and 345g of water .
Get your water up to temperature (195-205F) . The water temperature goal is to brew with water that’s around 205-206F . We suggest 208ºF if you’re using a Fellow Stagg EKG PRO kettle .
For grind size, most experts recommend medium-coarse. Grind the coffee on a medium setting (similar to granulated sugar) . Using your scale, measure out 23 grams of coffee beans and grind your coffee to a medium-coarse grind. Your Clever dripper grind size should be similar to a French press, but slightly finer . You’ll want them to be just a bit coarser than medium grounds for pour-over. If you’re using a Baratza Encore like our example, we recommend starting around a 20 .
Step-by-Step Brewing Method
Start by preheating your dripper and rinsing the paper filter. Preheat your Clever Dripper by filling it with hot water, then dump the water from the mug . Add your freshly ground coffee to your filter. Give the Clever Dripper a gentle shake to flatten the bed of coffee .
Start timer and pour 50g of water over the coffee, making sure to saturate all the grounds thoroughly. Allow the coffee to bloom for 30 seconds . Pour enough coffee to completely saturate your coffee grounds, about 50g or so. Wait 30 seconds .
Begin pouring water and stop when you’ve reached 450g of water. Technique is not as important here as it would be with a pour over, just be sure to fully saturate the grounds . Pour the rest of your 345g of water quickly, almost aggressively even. There’s no special technique here. The goal here is to completely saturate all of the grounds and start the brewing process ASAP .
At :30, stir coffee in a large circle, twice around the full circumference of the dripper to submerge any grounds that have risen to the top. Place lid on top to retain heat. At 2:00, place Clever on top of your cup or carafe .
Timing and Extraction
The total brew time should range from 3 to 4 minutes depending on your method. When the timer reads 2:30, set the Clever on top of you mug or carafe allowing coffee to begin to drain through. It should take between 45 seconds and 1:15 for the Clever to fully drain. (Total brew time should be 3:15-3:45.)
Let the coffee brew for 2 minutes, then give it a final stir to incorporate and grounds stuck to the filter. Place the Clever Dripper on an appropriately sized vessel to release the valve. The coffee should take around 2 minutes to drain .
Just after two and a half minutes, it’s time to draw down your coffee. The coffee will “draw down” through the dripper - leaving the grounds up top in the filter. This process should take 30-45 seconds .
Troubleshooting and Adjustments
If your coffee isn’t extracting properly, grind size is usually the first variable to adjust. If it takes longer, you’ll want to adjust your grind setting coarser for the next time. If it drains too fast, adjust your grind setting finer . Grind finer if the coffee tastes too acidic or the brew drained too quickly. Grind courser if it’s too bitter or the brew drained too slowly .
Adjusting to taste: if your draw down is happening very quickly, make your grind a bit finer to avoid a weak brew. If your coffee is taking too long to draw down, make your grind a bit coarser to avoid over-extraction .
If coffee is harsh tasting, coarsen the grind to help ease the extraction. If brew tastes underdeveloped, try making the grind a little finer to increase speed and amount of extraction .
For strength adjustments, you can also modify your coffee-to-water ratio or steeping time. If you find your coffee not strong enough or too strong, you can adjust the coffee to water ratio. If your coffee isn’t as strong as you’d like, adjust your ratio to add another gram or so of coffee .
Advanced Techniques
Some coffee professionals have developed alternative methods for the Clever Dripper. Pour 300 mL of just boiling water (between 195°-205°F, or 91°-96°C) into the Clever Dripper. Add your 20g of medium to medium/fine ground coffee to the water. The coffee to water ratio should be around 1:15-1:20. (Hoffmann prefers a ratio of 60-65 grams of coffee per liter) Let the water and coffee steep together in the Dripper for 2-3 minutes .
This “water-first” method was popularized by James Hoffmann and Workshop Coffee in London, providing even more control over the extraction process. This technique is widely known as the “Jason Dominy Method.” This method has consistently produced delicious results in our lab and in the field .
